67 Days! Even if you are
just discovering 100 Days to Christmas, you can still catch up and be ready. We are taking baby steps so that December will be a fun month rather than a stressful push to just “get through the holidays”.
My sister informed me that she had the best recipe for pumpkin bread/muffins. She said they were the moistest muffins she’d ever had. The kids and I made her recipe and we are hooked!
Today’s Countdown to Christmas Challenge is to make yourself a delicious loaf of pumpkin bread or muffins today. Not only does it make a great breakfast, but it also makes a terrific after-dinner treat. We recently cut up 3 pumpkins from our garden and used the puree for these muffins and they were amazing!

I love pumpkin bread! I always make mine with mini chocolate chips! My son and I are going to make a batch and bake them in mini loaves to give away.
I LOVE pumpkin bread and usually bake some to share with my neighbors. I add extra cinnamon and coat the pan with sugar instead of flour. Yum!

Oooh just looked at the recipe and I am very excited! I’ve only ever had Pumpkin Bread from a mix (or Starbucks!!) and they all contain milk products! Yours is dairy free AND I can just switch out the flours and use Rice Flour to make it wheat free! Thanks for sharing that recipe!

My mother used to make a pumpkin bread to die for. But alas she lost the recipe – this one looks like it’s almost the same.

I am all about the pumpkin bread in the fall! Have already made a batch…still working our way through it! I’ve also been making mini muffins with the receipe…my kids love that almost more than the bread! I think because it is so easy just to pop one in your mouth!
