Actually have some in the crockpot right now! Yum! We actually always have potatoe soup on Christmas eve in addition to everything else we have...it's become a tradition. There's always a pot of soup or stew on my stove in the cooler months, usually starting in October with a squash soup. Today there are some beans soaking to make a white bean soup with rosemary. We don't make a meal of it on Sundays, but we usually have it on Mondays when it's easy for a weeknight meal. This is another great idea.
