There are so many types of traditional Christmas cookies and so little time, but it is fun to start as soon as possible and bake a variety. Cookies make terrific gifts and last-minute offerings when dropping by to say Merry Christmas to a friend. Most cookies freeze well so you can pull them out when you need them.
The Countdown to Christmas Challenge for today is to put on som
e of your favorite Christmas music, gather your ingredients, mixing bowls, spatulas and stirring spoons, and any children you might have in your home for some cookie-baking fun!

That sounds like so much fun…. but this year I am not baking – oh the lemon bars, pinwheel refrigerator cookies, spritzer cookies I could go on and on. Why I am not baking is because Hubs now has a Cardiologist and is on two different medications. He has worked really hard to lose 40 pounds and I lost 27 pounds. As much as I would love to bake, we eat what I bake and all the yummy butter that goes into the cookies isn’t heart healthy or calorie conscious. So this year I chose not to tempt Hubs with cookies and make him feel like I’m sabotaging his hard work.
I will miss baking with holiday music on and my kitchen filled with the aroma of all those cookies baking.
We bake and give away. Starting with last year, we began simplifying. (I know you’re not surprised.) I will only be making TWO favorites. I don’t think the others will be missed.
